Light and refreshing, this Mango Black Bean Arugula Salad is packed with unique flavor that is sure to please! Sweet and simple, you will want to make this salad time and time again. As written, this recipe serves 2 nicely. But it’s easily doubled or tripled if your serving more!

Creamy avocado, sweet mango, red onion and black beans pair so well with the peppery arugula. Dressed simply with olive oil and salt, all of the flavors shine.

Making your salad:
First, grab a big handful of arugula and add it to a large mixing bowl. Dress the greens with extra virgin olive oil and salt so they are nicely coated.

Next, add in your mango, beans, and onion. Toss together until just mixed.
I love using ataulfo mangoes (also called champagne mangoes) for my recipes when they are in season. They are smaller than traditional mangoes and are an orange/yellow color. They are super sweet and have a delicious flavor. You can use any mango in this recipe. Frozen, thawed mango would be great too.

Then the last step is to add in your cubed avocado. Cube your avocado using the same technique as you would use on your mango. See my “Mom” tip below for help with this. Toss gently as to not squish your avocado. That’s it!

“Mom” tip:
Mangoes can be a little tricky to cut. There is a big, flat pit in the center of it. Take your mango and cut the 2 halves off of each side of the pit. Then slice each half into cubed sections, trying not to cut through the skin. Last, peel or cut the cubes off the skin, gently, as they can squish easily.

Mango Black Bean Arugula Salad
Ingredients
- 1 large handful arugula
- 1 T extra virgin olive oil
- 1/2 15oz can black beans, drained and rinsed
- 1 mango, cubed can use frozen, thawed mango, about 1 cup
- 1/4 cup red onion, thinly sliced
- 1/2 tsp salt I use pink Himalayan
- 1 large avocado, cubed
- juice from 1/2 a lime, optional
Instructions
- In a large mixing bowl, combine arugula with oil.
- To this add black beans, mango, onion, and salt. Toss gently to combine.
- Lastly, add cubed avocado and lime juice if using and toss gently again.
- Taste and add salt or lime juice as needed.
