Mango Black Bean Arugula Salad

Peppery arugula, sweet mango, and creamy avocado come together in this light and refreshing salad!

Ingredients

  • 1 large handful arugula
  • 1 T extra virgin olive oil
  • 1/2 15oz can black beans, drained and rinsed
  • 1 mango, cubed can use frozen, thawed mango, about 1 cup
  • 1/4 cup red onion, thinly sliced
  • 1/2 tsp salt I use pink Himalayan
  • 1 large avocado, cubed
  • juice from 1/2 a lime, optional

Instructions

  • In a large mixing bowl, combine arugula with oil.
  • To this add black beans, mango, onion, and salt. Toss gently to combine.
  • Lastly, add cubed avocado and lime juice if using and toss gently again.
  • Taste and add salt or lime juice as needed.

Notes

This recipe serves 2 nicely. It can easily be doubled or tripled if needed.
Cilantro would also be a great addition to this salad.
