Mango Black Bean Arugula Salad
Peppery arugula, sweet mango, and creamy avocado come together in this light and refreshing salad!
Prep Time 15 minutes minutes
- 1 large handful arugula
- 1 T extra virgin olive oil
- 1/2 15oz can black beans, drained and rinsed
- 1 mango, cubed can use frozen, thawed mango, about 1 cup
- 1/4 cup red onion, thinly sliced
- 1/2 tsp salt I use pink Himalayan
- 1 large avocado, cubed
- juice from 1/2 a lime, optional
In a large mixing bowl, combine arugula with oil.
To this add black beans, mango, onion, and salt. Toss gently to combine.
Lastly, add cubed avocado and lime juice if using and toss gently again.
Taste and add salt or lime juice as needed.
This recipe serves 2 nicely. It can easily be doubled or tripled if needed.
Cilantro would also be a great addition to this salad.
