Now, I am definitely on team cauliflower when it comes to healthy substitutions these days, what about you? Many of us are looking for lower carb and lower calorie options and these potatoes definitely fit the bill.
They are healthy, can easily be made vegan, and are a great alternative to traditional mashed potatoes.
Making the “potatoes”:
These cauliflower mashed potatoes are super easy to make and come together in only a few steps!
First, cut the cauliflower into medium sized florets and steam until fork tender. I like using a steamer basket inside a pot for this job.
Next, place the cauliflower into a food processor along with the rest of the ingredients.
(A note on food processors: I have had a few different food processors in my cooking journey. Some have been big and fancy, others very small. My favorite one that I use time and time again is a simple, 8 cup food processor, by Hamiliton Beach. It gets the job done and is easy to clean.)
Then you’ll blend everything together until a creamy consistency is reached, scraping down the sides of the food processor if needed. The hot cauliflower can sometimes cause steam to build up inside the container, so be careful when opening the lid.
Lastly, give your potatoes a taste and add any extra salt or pepper if needed, that’s it! The simplest cauliflower mashed potatoes you’ll ever make!
“Mom” tip:
These mashed potatoes are a great way to get some vegetables in your kiddos. My daughter likes to use these potatoes as a dip for her broccoli or whatever else we are having for dinner that night. For the finickiest of eaters, make a baked potato on the side and mix it in with the cauliflower. They will be none the wiser.

Simple Cauliflower Mashed Potatoes
Ingredients
- 1 medium head cauliflower, cut into florets
- 1 T butter if vegan substitute vegan butter
- 1/4 tsp salt I use pink Himalayan sea salt
- 1/4 tsp pepper, fresh ground
- 1/8-1/4 tsp garlic powder
Instructions
- In a large pot, place a half inch of water and steamer basket. Heat over medium/high heat.
- Place cauliflower florets in steamer basket.
- Cover with a lid and steam cauliflower until fork tender, about 20 minutes.
- Add the cauliflower to a food processor, along with the butter, salt, pepper, and 1/8th tsp garlic powder.
- Blend until thoroughly mixed and the consistency of mashed potatoes, being careful of steam build up.
- Taste and adjust seasonings, adding more salt, pepper, and remaining garlic powder if needed.
