Simple Cauliflower Mashed Potatoes

Ingredients

  • 1 medium head cauliflower, cut into florets
  • 1 T butter if vegan substitute vegan butter
  • 1/4 tsp salt I use pink Himalayan sea salt
  • 1/4 tsp pepper, fresh ground
  • 1/8-1/4 tsp garlic powder

Instructions

  • In a large pot, place a half inch of water and steamer basket. Heat over medium/high heat.
  • Place cauliflower florets in steamer basket.
  • Cover with a lid and steam cauliflower until fork tender, about 20 minutes.
  • Add the cauliflower to a food processor, along with the butter, salt, pepper, and 1/8th tsp garlic powder.
  • Blend until thoroughly mixed and the consistency of mashed potatoes, being careful of steam build up.
  • Taste and adjust seasonings, adding more salt, pepper, and remaining garlic powder if needed.

Notes

If you don't have food processor, you can use blender or mash with a fork or potato masher.
I like to garnish these "potatoes" with chives, an extra pat of butter, and/or a twist of salt and pepper.
